Ingredients
  

  • 1 pound ground chicken
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 onion chopped
  • 2 carrots sliced
  • 2 celery stalks sliced
  • 3 cloves garlic minced
  • 6 cups chicken broth
  • 1 cup pasta (such as orzo)
  • 2 cups spinach chopped
  • 1 tablespoon fresh parsley chopped

Instructions
 

  • In a medium mixing bowl, combine ground chicken, breadcrumbs, Parmesan cheese, egg, salt, and black pepper.
  • Form the mixture into small meatballs, approximately 1 inch in diameter.
  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion, carrots, celery, and minced garlic to the pot and sauté until vegetables are tender.
  • Pour in chicken broth and bring to a boil.
  • Gently add the meatballs to the pot and reduce heat to a simmer.
  • Cook meatballs for approximately 15 minutes until cooked through.
  • Add pasta to the soup and cook for an additional 10 minutes.
  • Stir in chopped spinach and cook until wilted.
  • Remove from heat and let the soup rest for 5 minutes.
  • Garnish with fresh parsley before serving.

Notes

For best results, ensure that the meatballs are uniform in size to allow for even cooking. You can make the meatballs in advance and freeze them for quicker preparation later. Adjust the seasoning to taste, and feel free to add additional herbs or spices for extra flavor.
