Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 2 cups mushrooms sliced
  • 1 pound boneless chicken breasts cut into small pieces
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 2 tablespoons fresh parsley chopped

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and cook until translucent.
  • Stir in minced garlic and sliced mushrooms, cooking until mushrooms are softened.
  • Add chicken pieces to the pot and cook until browned on all sides.
  • Pour in chicken broth and bring to a boil.
  • Reduce heat and let simmer for about 15 minutes.
  • Stir in heavy cream, salt, pepper, and dried thyme.
  • Allow soup to simmer for an additional 5 minutes.
  • Remove from heat and let rest for 5 minutes before serving.
  • Garnish with fresh parsley before serving.

Notes

For an even richer flavor, consider using a mixture of mushroom varieties such as shiitake and cremini. If you prefer a thicker soup, you can mix a tablespoon of cornstarch with cold water and stir it into the soup during the final simmering stage. Adjust seasoning according to your taste, and feel free to add a splash of lemon juice for a hint of brightness.
