Ingredients
  

  • 1 pound boneless chicken breast diced
  • 2 tablespoons olive oil
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 2 medium carrots sliced
  • 2 celery stalks sliced
  • 8 cups chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 cup egg noodles uncooked
  • 2 tablespoons fresh parsley chopped

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add diced chicken and cook until browned and cooked through.
  • Remove the chicken from the pot and set aside.
  • In the same pot, add onion and garlic, sauté until softened.
  • Stir in carrots and celery, cooking for about 5 minutes.
  • Pour in chicken broth and bring to a boil.
  • Add salt, pepper, and thyme to the pot.
  • Stir in egg noodles and cook until tender, about 8 minutes.
  • Return the chicken to the pot and heat through.
  • Garnish with fresh parsley before serving.

Notes

For a richer flavor, consider using chicken thighs instead of breast meat. You can also add a bay leaf during cooking for an aromatic touch, but remember to remove it before serving. Adjust the seasoning to your taste, and feel free to add more vegetables such as peas or corn for added texture and nutrition.
