Ingredients
  

  • 1 pound ground chicken
  • 1 cup breadcrumbs
  • 1/2 cup Parmesan cheese grated
  • 1/4 cup parsley chopped
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup marinara sauce
  • 1 cup mozzarella cheese shredded

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, combine ground chicken, breadcrumbs, Parmesan cheese, parsley, egg, garlic powder, onion powder, salt, and black pepper.
  • Mix the ingredients until well combined.
  • Transfer the mixture into a loaf pan and shape into a loaf.
  • Spread half of the marinara sauce over the top of the meatloaf.
  • Bake in the preheated oven for 30 minutes.
  • Remove from oven and spread remaining marinara sauce over the meatloaf.
  • Sprinkle mozzarella cheese on top.
  • Return to the oven and bake for an additional 15 minutes.
  • Allow the meatloaf to rest for 10 minutes before slicing and serving.

Notes

For best results, use freshly grated Parmesan cheese as it melts better and adds more flavor than pre-shredded versions. If you prefer, you can substitute ground turkey for chicken. Additionally, using a meat thermometer can help ensure the meatloaf is cooked thoroughly, aiming for an internal temperature of 165°F (75°C).
