Ingredients
  

  • 2 cups marinara sauce
  • 2 tablespoons olive oil
  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs
  • 1 cup grated Parmesan cheese
  • 4 slices mozzarella cheese
  • 4 sandwich rolls
  • 1 tablespoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Heat olive oil in a large skillet over medium heat.
  • Season chicken breasts with salt, pepper, garlic powder, and oregano.
  • Dredge each chicken breast in flour.
  • Whisk eggs in a mixing bowl and dip each flour-coated chicken breast in the egg.
  • Coat chicken breasts with breadcrumbs mixed with Parmesan cheese.
  • Cook chicken in the skillet until golden brown on both sides.
  • Transfer chicken to a baking sheet.
  • Spoon marinara sauce over each chicken breast.
  • Place a slice of mozzarella cheese on top of each.
  • Bake in the oven until cheese is melted and bubbly.
  • Toast sandwich rolls until lightly golden.
  • Assemble each sandwich by placing a chicken breast in a roll.
  • Garnish with fresh basil leaves.
  • Let sandwiches rest for 5 minutes before serving.

Notes

For a crispier crust, use panko breadcrumbs instead of regular ones. Make sure the chicken breasts are of even thickness for consistent cooking. You can add a layer of arugula or spinach for a fresh, peppery kick. If you prefer a spicier sauce, add a pinch of red pepper flakes to the marinara.
