Ingredients
  

  • 2 tablespoon olive oil
  • 1 medium onion diced
  • 2 clove garlic minced
  • 1 pound chicken breast diced
  • 1 cup pastina pasta
  • 4 cup chicken broth
  • 1 cup water
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoon fresh parsley chopped

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add diced onion and sauté until translucent.
  • Stir in minced garlic and cook for an additional minute.
  • Add diced chicken breast to the pot and cook until browned.
  • Pour in pastina pasta and stir to coat with the oil.
  • Add chicken broth, water, salt, and pepper to the pot.
  • Bring the mixture to a boil, then reduce heat to a simmer.
  • Cook until the pasta is tender and the chicken is fully cooked, about 10 minutes.
  • Stir in grated Parmesan cheese and chopped parsley.
  • Remove from heat and let the dish rest for 5 minutes before serving.

Notes

When cooking Chicken Pastina, it's important to stir the pasta occasionally to prevent it from sticking to the bottom of the pot. For a creamier texture, you can add a splash of cream or more cheese near the end of the cooking process. Adjust the seasoning to taste, and feel free to add more vegetables like carrots or spinach for added nutrition and flavor.
