Chicken Pesto Sandwich

  • 1 Cutting board
  • 1 Mixing bowl

  • 1 measuring cup

Ingredients
  

  • 2 Whole Grain Baguettes
  • 2 Chicken Breasts
  • 4 tablespoons Pesto Sauce
  • 1 tablespoon Olive Oil
  • 4 slices Mozzarella Cheese
  • 1 Tomato sliced
  • 1/4 cup Arugula
  • Salt and Pepper to taste

Instructions
 

  • Preheat the skillet over medium heat and add olive oil.
  • Season chicken breasts with salt and pepper.
  • Cook chicken breasts in the skillet for about 6-7 minutes on each side until fully cooked.
  • Let the cooked chicken rest for 5 minutes, then slice into strips.
  • Slice the baguettes in half lengthwise.
  • Spread 2 tablespoons of pesto sauce on each half of the baguettes.
  • Layer chicken strips on the bottom half of each baguette.
  • Add slices of mozzarella cheese over the chicken.
  • Place tomato slices and arugula on top of the cheese.
  • Close the sandwich with the top half of the baguette.
  • Place the sandwiches back in the skillet and press down slightly, cooking for 2-3 minutes on each side until the bread is toasted and the cheese has melted.

Notes

For extra flavor, consider using a variety of pestos like sun-dried tomato or spicy basil. Experiment with adding grilled vegetables such as bell peppers or zucchini for added texture and taste. If you prefer a crispier sandwich, use a panini press instead of a skillet to achieve a delightful crunch.
