Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 2 medium carrots sliced
  • 2 stalks celery sliced
  • 1 pound chicken breast diced
  • 1 cup quinoa rinsed
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups spinach chopped
  • 1 tablespoon lemon juice

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and minced garlic to the pot and sauté until onion is translucent.
  • Add carrots and celery, cooking until they begin to soften.
  • Stir in diced chicken breast and cook until lightly browned.
  • Add rinsed quinoa to the pot and stir to combine.
  • Pour in chicken broth and add dried thyme, salt, and black pepper.
  • Bring the mixture to a boil, then reduce heat to low and simmer for 20 minutes.
  • Add chopped spinach and lemon juice, stirring until spinach is wilted.
  • Taste and adjust seasoning if necessary.
  • Serve hot with a ladle into bowls.

Notes

For a richer flavor, consider using homemade chicken broth. You can also add extra herbs like parsley or basil for additional freshness. If you prefer a creamier texture, blend a portion of the soup and stir it back into the pot. Adjust the amount of lemon juice to taste for a brighter flavor profile.
