Ingredients
  

  • 2 cup cooked chicken diced
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1/4 cup celery finely chopped
  • 1/4 cup red onion finely chopped
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 slice sandwich bread
  • 4 leaf lettuce
  • 1 large tomato sliced

Instructions
 

  • In a medium bowl, combine diced chicken, mayonnaise, and Dijon mustard.
  • Stir in chopped celery and red onion.
  • Add fresh lemon juice, salt, and black pepper to the mixture and mix well.
  • Let the chicken salad rest for 5 minutes to allow flavors to meld.
  • Toast or grill the sandwich bread slices until golden brown.
  • Place a leaf of lettuce on one slice of toasted bread.
  • Scoop a generous amount of chicken salad onto the lettuce.
  • Add a couple of tomato slices on top of the chicken salad.
  • Cover with another slice of toasted bread to complete the sandwich.
  • Repeat steps for the remaining sandwiches.

Notes

For an extra kick, consider adding a dash of hot sauce or a sprinkle of paprika to the chicken salad mixture. Using fresh, high-quality bread will enhance the texture and taste of the sandwich. If you're looking for a lighter option, Greek yogurt can be substituted for mayonnaise.
