Ingredients
  

  • 2 tablespoons olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 4 cups chicken broth
  • 1 pound boneless, skinless chicken breasts diced
  • 5 ounces fresh spinach washed and chopped
  • 2 medium carrots sliced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon lemon juice

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and cook until translucent, about 3 minutes.
  • Stir in minced garlic and cook for another minute.
  • Pour in chicken broth and bring to a simmer.
  • Add diced chicken breasts to the pot and cook until no longer pink, about 10 minutes.
  • Stir in chopped spinach, sliced carrots, salt, black pepper, dried thyme, and red pepper flakes.
  • Continue to simmer for another 10 minutes until vegetables are tender.
  • Stir in lemon juice and remove the pot from heat.
  • Let the soup rest for 5 minutes before serving.

Notes

For extra flavor, consider adding a splash of white wine while cooking the chicken, and garnish the soup with freshly grated Parmesan cheese before serving. To save time, you can use pre-cooked rotisserie chicken instead of raw chicken breasts. Make sure to taste and adjust the seasoning according to your preference.
