Ingredients
  

  • 1 tablespoon olive oil
  • 1 large onion diced
  • 3 clove garlic minced
  • 1 pound chicken breast cut into chunks
  • 3 carrots sliced
  • 2 potatoes diced
  • 4 cup chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1 cup frozen peas

Instructions
 

  • Heat the olive oil in a large pot over medium heat.
  • Add the diced onion and cook until translucent.
  • Stir in the minced garlic and cook for 1 minute.
  • Add the chicken chunks and brown on all sides.
  • Stir in the carrots and potatoes.
  • Pour in the chicken broth and bring to a simmer.
  • Season with salt, black pepper, thyme, and add the bay leaf.
  • Cover and let simmer for 45 minutes until the chicken is cooked through and vegetables are tender.
  • Stir in the frozen peas and cook for another 5 minutes.
  • Remove the bay leaf before serving.

Notes

For a richer flavor, consider browning the chicken in batches to avoid overcrowding the pot. You can also add a splash of white wine when deglazing the pot for an extra depth of flavor. Adjust the seasoning to taste and feel free to add other herbs like rosemary or parsley for additional aroma.
