Ingredients
  

  • 2 tablespoons olive oil
  • 1 pound chicken breast cubed
  • 1 onion diced
  • 2 carrots sliced
  • 2 celery stalks sliced
  • 3 cloves garlic minced
  • 6 cups chicken broth
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 2 tablespoons butter melted
  • 2 tablespoons fresh parsley chopped

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add the cubed chicken breast and cook until browned.
  • Remove the chicken and set aside.
  • In the same pot, add onion, carrots, and celery, cooking until softened.
  • Stir in garlic and cook for an additional minute.
  • Pour in chicken broth and add thyme, rosemary, salt, and pepper.
  • Return chicken to the pot and bring to a simmer.
  • In a large mixing bowl, combine flour, baking powder, and salt.
  • Stir in milk and melted butter until a dough forms.
  • Drop spoonfuls of dough into the simmering stew.
  • Cover and let the dumplings cook for 15 minutes.
  • Check the dumplings for doneness and remove from heat.
  • Allow the stew to rest for 10 minutes before serving.
  • Garnish with fresh parsley before serving.

Notes

For best results, use fresh herbs to enhance the flavor of the stew. If you prefer a thicker stew, consider adding a cornstarch slurry to the broth before adding the dumplings. Adjust salt and pepper to taste after the stew has simmered to ensure proper seasoning.
