Ingredients
  

  • 2 tablespoon olive oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 2 medium carrots sliced
  • 2 stalks celery sliced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 4 cups chicken broth
  • 2 cups cooked chicken shredded
  • 9 ounces cheese tortellini
  • Salt and pepper to taste
  • 2 tablespoon fresh parsley chopped

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add diced onion and sauté until translucent.
  • Stir in minced garlic, carrots, and celery, cooking for an additional 5 minutes.
  • Sprinkle in dried thyme and basil, stirring to combine.
  • Pour in chicken broth and bring to a boil.
  • Reduce heat and simmer for 10 minutes until vegetables are tender.
  • Add shredded chicken and tortellini to the pot.
  • Cook for 7-8 minutes, or until tortellini is tender.
  • Season with salt and pepper to taste.
  • Stir in chopped parsley before serving.
  • Let the soup rest for 5 minutes before ladling into bowls.

Notes

For a more flavorful soup, consider using homemade chicken broth. You can also add other vegetables like spinach or kale for extra nutrients. If you prefer a creamier texture, stir in a splash of heavy cream before serving. Adjust seasoning according to your taste and serve with crusty bread for a complete meal.
