Ingredients
  

  • 1 pound chicken wings
  • 4 cups chicken broth
  • 1 cup water
  • 2 tablespoons olive oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 2 carrots sliced
  • 2 stalks celery sliced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 cup frozen peas
  • 2 tablespoons fresh parsley chopped

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add diced onion and minced garlic, sauté until translucent.
  • Add chicken wings to the pot and brown on all sides.
  • Pour in chicken broth and water, and bring to a boil.
  • Add sliced carrots, celery, salt, pepper, and dried thyme.
  • Reduce heat to low and simmer for 30 minutes.
  • Add frozen peas and cook for an additional 5 minutes.
  • Remove the soup from heat and let it rest for 10 minutes.
  • Skim any excess fat from the surface if necessary.
  • Garnish with chopped fresh parsley before serving.

Notes

For a richer flavor, you can roast the chicken wings beforehand or use homemade chicken broth. Adjust the seasoning to taste, and feel free to add other vegetables like potatoes or mushrooms for extra heartiness. If you prefer a thicker soup, mash some of the cooked vegetables into the broth or add a small amount of cream.
