Ingredients
  

  • 1 can chickpeas drained and rinsed
  • 1 large cucumber diced
  • 1/2 cup feta cheese crumbled
  • 1/4 cup red onion finely chopped
  • 1/4 cup fresh parsley chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions
 

  • In a large mixing bowl, combine the chickpeas, cucumber, feta cheese, red onion, and parsley.
  • In a small bowl, whisk together the olive oil, lemon juice, oregano, salt, and pepper until well combined.
  • Pour the dressing over the salad ingredients in the large bowl.
  • Toss the salad gently to ensure all ingredients are well coated with the dressing.
  • Adjust seasoning with more salt and pepper if needed before serving.
  • Serve immediately or refrigerate for up to an hour to allow flavors to meld.

Notes
