Ingredients
  

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 bell pepper diced
  • 1 can kidney beans drained and rinsed
  • 1 can black beans drained and rinsed
  • 1 can diced tomatoes
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup beef broth
  • 1 tablespoon tomato paste

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and minced garlic to the pot and sauté until fragrant.
  • Add ground beef to the pot and cook until browned.
  • Stir in diced bell pepper and cook for 2-3 minutes.
  • Add kidney beans, black beans, diced tomatoes, chili powder, cumin, salt, and black pepper to the pot.
  • Pour in beef broth and stir in tomato paste until well combined.
  • Bring the mixture to a boil, then reduce heat and simmer for 45 minutes, stirring occasionally.
  • Remove from heat and let the chili rest for 10 minutes before serving.

Notes

For a richer flavor, consider cooking the chili a day in advance and storing it in the refrigerator overnight; this allows the flavors to meld together. You can adjust the spice level by adding more chili powder or a pinch of cayenne pepper. Serve with toppings like sour cream, shredded cheese, or chopped cilantro for added flavor.
