Ingredients
  

  • 1 pound ground beef
  • 15 ounces kidney beans drained and rinsed
  • 15 ounces black beans drained and rinsed
  • 15 ounces diced tomatoes
  • 6 ounces tomato paste
  • 1 cup beef broth
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper optional
  • 1 tablespoon olive oil

Instructions
 

  • Heat olive oil in a skillet over medium heat.
  • Add ground beef to the skillet and cook until browned.
  • Drain excess fat from the beef and transfer it to the crockpot.
  • Add diced onion and minced garlic to the crockpot.
  • Stir in kidney beans, black beans, diced tomatoes, and tomato paste.
  • Pour in beef broth and mix well.
  • Add chili powder, cumin, paprika, salt, black pepper, and cayenne pepper.
  • Stir all ingredients to combine evenly.
  • Cover the crockpot and set it to cook on low for 6 hours.
  • Once cooked, let the chili rest for 10 minutes before serving.

Notes

For the best flavor, consider making the chili a day in advance as it often tastes better after the flavors have had time to meld together. Adjust the spice level by modifying the amount of cayenne pepper to suit your taste, and feel free to garnish with your favorite toppings like shredded cheese, sour cream, or fresh cilantro.
