Ingredients
  

  • 200 grams noodles
  • 1 liter chicken broth
  • 200 grams chicken breast thinly sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon vegetable oil
  • 1 teaspoon sesame oil
  • 100 grams bok choy chopped
  • 2 cloves garlic minced
  • 1 inch ginger grated
  • 2 green onions sliced
  • Salt to taste
  • Pepper to taste

Instructions
 

  • Boil the noodles in a large pot of water until cooked, then drain and set aside.
  • In the same pot, heat vegetable oil over medium heat and sauté garlic and ginger until fragrant.
  • Add chicken slices to the pot and cook until they are no longer pink.
  • Pour in chicken broth and bring to a simmer.
  • Stir in soy sauce and sesame oil, then add bok choy and carrots.
  • Cook until the vegetables are tender.
  • Add the cooked noodles back to the pot and stir to combine.
  • Season with salt and pepper to taste.
  • Ladle the soup into bowls and top with sliced green onions.
  • Serve hot and enjoy.

Notes

For a richer flavor, you can use bone-in chicken pieces and simmer the broth for a longer time to extract more depth from the bones. Additionally, feel free to customize your soup by adding other vegetables like mushrooms or spinach, and adjust the seasoning according to your preference.
