Equipment

  • 1 Mixing bowl
  • 1 Electric mixer
  • 1 Baking sheet
  • 1 Parchment paper
  • 1 Cooling rack
  • 1 Cookie cutter

Ingredients

  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup chocolate chips

Instructions

  • Preheat the oven to 350°F (175°C).
  • Line a baking sheet with parchment paper.
  • In a mixing bowl, cream together the butter and sugar using an electric mixer until light and fluffy.
  • Beat in the egg and vanilla extract until well combined.
  • In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • Stir in the chocolate chips.
  • Roll the dough into 1-inch balls and place them on the prepared baking sheet.
  • Flatten each ball slightly with the back of a spoon.
  • Bake in the preheated oven for 10-12 minutes until the edges are set.
  • Remove from the oven and let the biscuits rest on the baking sheet for 5 minutes.
  • Transfer the biscuits to a cooling rack to cool completely.

Notes

For an extra burst of flavor, consider adding a pinch of cinnamon or a dash of espresso powder to the dough. Be sure not to overbake the biscuits as they will continue to firm up as they cool. If you prefer a softer biscuit, reduce the cooking time by a minute or two.
