Ingredients
  

  • 1 cup almond flour
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter melted
  • 1 cup semisweet chocolate chips
  • 1/2 cup dried cherries
  • 1/2 teaspoon almond extract
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder

Instructions
 

  • Preheat the oven to 350°F (175°C) and line the baking pan with parchment paper.
  • In a mixing bowl, combine almond flour, granulated sugar, and salt.
  • Add the melted butter to the dry ingredients and mix until well incorporated.
  • Press the almond mixture evenly into the bottom of the prepared baking pan to form the crust.
  • Bake the crust for 10 minutes, then remove from the oven and let it cool slightly.
  • In the same mixing bowl, beat the eggs and almond extract until frothy.
  • Add the all-purpose flour and baking powder to the egg mixture and mix until smooth.
  • Stir in the chocolate chips and dried cherries until evenly distributed.
  • Pour the chocolate cherry mixture over the cooled almond crust.
  • Spread the mixture evenly using a spatula.
  • Bake for 15 minutes or until the top is golden brown and firm.
  • Allow the cookie bars to cool in the pan for at least 30 minutes before slicing.

Notes

Ensure that the almond crust is pressed firmly and evenly in the baking pan to prevent any gaps or uneven baking. If the dried cherries are particularly large, consider chopping them into smaller pieces for a more uniform distribution. For an extra touch of flavor, lightly toast the almond flour in a pan over medium heat before using it in the crust.
