Ingredients
  

  • 1 cup mixed greens chopped
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup cucumber diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup feta cheese crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 slices whole grain bread toasted
  • 1/2 avocado sliced

Instructions
 

  • In a mixing bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, and feta cheese.
  • Drizzle the olive oil and red wine vinegar over the salad mixture.
  • Season the salad with salt and black pepper, then toss to combine.
  • Toast the whole grain bread slices until golden brown.
  • Spread the avocado slices evenly over one side of each toasted bread slice.
  • Pile the chopped salad mixture onto the avocado-covered side of one slice of bread.
  • Place the second slice of bread, avocado side down, on top of the salad mixture to form a sandwich.
  • Allow the sandwich to rest for 5 minutes before serving to let the flavors meld.

Notes

For an extra crunch, you can add a handful of crushed tortilla chips to the chopped salad mixture. If you prefer a bit of spice, consider adding a pinch of red pepper flakes to the salad dressing. This sandwich can be made ahead of time; just store the salad mixture separately and assemble right before serving to keep the bread from getting soggy.
