Ingredients
  

  • 250 grams chorizo sausage casing removed
  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 300 grams shredded Oaxaca cheese
  • 100 grams shredded Monterey Jack cheese
  • 1 jalapeño sliced
  • 2 tablespoons fresh cilantro chopped
  • 1 lime cut into wedges
  • Salt and pepper to taste
  • Tortilla chips or warm tortillas for serving

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • Heat the olive oil in a large skillet over medium heat.
  • Add the diced onion and garlic, sautéing until the onion becomes translucent.
  • Crumble the chorizo into the skillet and cook until browned.
  • Remove the skillet from heat and drain any excess fat.
  • Transfer the chorizo mixture into an oven-safe dish.
  • Sprinkle the shredded Oaxaca and Monterey Jack cheese over the chorizo.
  • Top with sliced jalapeños.
  • Bake in the preheated oven for 10-15 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and allow to rest for 5 minutes.
  • Garnish with fresh cilantro and serve with lime wedges and tortilla chips or warm tortillas.

Notes

For best results, ensure the chorizo is cooked thoroughly to avoid any chewy texture before adding the cheese. You can customize the heat level by adjusting the amount of jalapeño. If you prefer a smokier flavor, consider adding a pinch of smoked paprika to the chorizo while cooking. Always serve immediately after resting for the best gooey-cheese experience.
