Ingredients
  

  • 2 cups whole milk
  • 1/2 cup granulated sugar
  • 3 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 large eggs beaten
  • 3 bananas sliced
  • 1 cup churro pieces chopped

Instructions
 

  • In a medium saucepan, combine the milk, sugar, cornstarch, and salt over medium heat.
  • Stir the mixture constantly until it begins to thicken and bubble.
  • In a separate bowl, gently whisk the beaten eggs.
  • Gradually add a small amount of the hot milk mixture to the eggs, whisking constantly.
  • Return the egg mixture to the saucepan and continue to cook until thickened.
  • Remove the saucepan from heat and stir in the vanilla extract.
  • Layer the sliced bananas and churro pieces in a baking dish.
  • Pour the pudding over the bananas and churros, ensuring an even spread.
  • Let the pudding cool to room temperature before covering and refrigerating.
  • Refrigerate for at least 2 hours before serving.

Notes

For best results, use ripe bananas as they add extra sweetness and flavor to the pudding. Ensure the pudding has completely cooled before serving to achieve the perfect consistency. You can also garnish with additional churro pieces or a sprinkle of cinnamon for an extra touch.
