Ingredients
  

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter melted
  • 2 tablespoons sugar
  • 3 packages 8 ounces each cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1/4 cup all-purpose flour
  • 1/2 cup sour cream
  • 1 cup brown sugar
  • 1 tablespoon ground cinnamon
  • 1/2 cup powdered sugar
  • 1-2 tablespoons milk
  • 1 teaspoon vanilla extract for icing

Instructions
 

  • Preheat the oven to 325°F (163°C).
  • Combine graham cracker crumbs, melted butter, and sugar in a mixing bowl.
  • Press the crumb mixture into the bottom of a springform pan to form the crust.
  • In a separate bowl, beat the cream cheese, sugar, and vanilla extract until smooth.
  • Add eggs one at a time, mixing well after each addition.
  • Stir in flour and sour cream until just combined.
  • Pour half of the cheesecake batter over the crust in the springform pan.
  • Mix brown sugar and cinnamon in a small bowl, then sprinkle half over the batter.
  • Pour the remaining batter over the cinnamon layer.
  • Sprinkle the remaining cinnamon mixture on top of the cheesecake.
  • Place the springform pan on a baking sheet and bake for 1 hour.
  • Turn off the oven and slightly crack the door, allowing the cheesecake to cool gradually.
  • Remove from oven and refrigerate for at least 4 hours or overnight.
  • For icing, mix powdered sugar, milk, and vanilla extract in a saucepan over low heat.
  • Drizzle the icing over the chilled cheesecake before serving.

Notes

For best results, ensure all ingredients are at room temperature before beginning to mix, as this will create a smoother texture. Avoid over-mixing the batter to prevent cracks in the cheesecake. When chilling, cover the cheesecake loosely with foil to avoid condensation dripping onto the surface. If you prefer a more pronounced cinnamon flavor, consider adding a pinch of nutmeg or clove to the cinnamon mixture.
