Ingredients
  

  • 2 tablespoons olive oil
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 1 pound ground beef
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons tomato paste
  • 1 can crushed tomatoes (28 ounces)
  • 1 can kidney beans drained and rinsed (14 ounces)
  • 1 can black beans drained and rinsed (14 ounces)
  • 1 cup beef broth
  • 1 bell pepper chopped

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  • Add the ground beef to the pot and cook until browned.
  • Stir in chili powder, cumin, paprika, cayenne pepper, salt, and black pepper.
  • Mix in the tomato paste and cook for another minute.
  • Pour in the crushed tomatoes and beef broth, stirring to combine.
  • Add the kidney beans, black beans, and chopped bell pepper to the pot.
  • Bring the mixture to a boil, then reduce heat and let simmer for 45 minutes, stirring occasionally.
  • Remove from heat and let the chili rest for 10 minutes before serving.

Notes

For a richer flavor, consider making the chili a day ahead and allowing it to sit in the refrigerator overnight; the spices will have more time to meld, resulting in a more robust taste. Additionally, feel free to adjust the level of cayenne pepper to suit your spice preference. Serve with toppings like shredded cheese, sour cream, or chopped green onions for added flavor.
