Equipment

Ingredients
  

  • 2 cup milk
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 2 large egg yolks
  • 2 tablespoon unsalted butter
  • 2 teaspoon vanilla extract

Instructions
 

  • In a medium saucepan, whisk together the sugar, cornstarch, and salt.
  • Gradually whisk in the milk until smooth.
  • Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens and comes to a boil.
  • In a separate bowl, beat the egg yolks.
  • Slowly add a small amount of the hot milk mixture to the egg yolks while whisking constantly.
  • Pour the egg mixture back into the saucepan and cook for an additional 2 minutes, stirring constantly.
  • Remove the saucepan from heat and stir in the butter and vanilla extract until smooth.
  • Transfer the pudding into a mixing bowl and cover with plastic wrap, pressing it directly onto the surface to prevent a skin from forming.
  • Allow the pudding to cool at room temperature for about 10 minutes, then refrigerate for at least 2 hours before serving.

Notes

For a richer flavor, use half-and-half instead of regular milk. If you prefer a smoother texture, strain the pudding through a fine-mesh sieve before chilling. To elevate your pudding, consider topping it with whipped cream or fresh fruit before serving.
