Ingredients
  

  • 4 fillet Cod
  • 1 cup All-purpose flour
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 2 Eggs
  • 1 cup Bread crumbs
  • 4 Bread rolls
  • 1 cup Lettuce shredded
  • 1 Tomato sliced
  • 1/4 cup Mayonnaise
  • 2 tablespoon Olive oil
  • 1 tablespoon Lemon juice

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, combine flour, salt, and pepper.
  • Beat the eggs in a separate bowl.
  • Place bread crumbs in another bowl.
  • Dredge each cod fillet in the flour mixture, then dip in the beaten eggs.
  • Coat the fillets with bread crumbs.
  • Heat olive oil in a frying pan over medium heat.
  • Fry the fillets in the pan for 3-4 minutes per side until golden brown.
  • Transfer the fillets to a baking sheet and bake in the oven for 5 minutes.
  • Let the fillets rest for 5 minutes after removing them from the oven.
  • Toast the bread rolls lightly.
  • Spread mayonnaise on the inside of the rolls.
  • Layer lettuce and tomato slices on the bottom half of each roll.
  • Place a cod fillet on top of the vegetables.
  • Drizzle lemon juice over the fish.
  • Top with the other half of the roll and serve immediately.

Notes

Ensure the cod fillets are dry before dredging them in flour to achieve a crispy coating. Adjust the seasoning to your taste, and consider adding herbs like dill or parsley to the mayonnaise for extra flavor. Toasting the bread rolls enhances the texture and prevents them from becoming soggy.
