Ingredients
  

  • 1 cup almond milk
  • 1/2 cup strong brewed coffee cooled
  • 1/4 cup chia seeds
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • salt pinch
  • whipped cream, chocolate shavings, or cocoa nibs optional toppings

Instructions
 

  • In a bowl, combine almond milk, brewed coffee, chia seeds, maple syrup, vanilla extract, ground cinnamon, and a pinch of salt.
  • Whisk the mixture until well combined and chia seeds are evenly distributed.
  • Let the mixture sit for 5 minutes, then whisk again to prevent clumping.
  • Cover the bowl and refrigerate for at least 4 hours or overnight, allowing it to thicken.
  • After resting, stir the pudding to ensure even consistency.
  • Divide the chia pudding into 4 serving glasses or bowls.
  • Top with whipped cream, chocolate shavings, or cocoa nibs if desired.
  • Serve chilled and enjoy.

Notes

For the best results, ensure that the coffee is completely cooled before mixing with other ingredients to prevent the pudding from becoming too watery. Adjust the sweetness to your taste by adding more or less maple syrup. Feel free to experiment with different toppings like fresh berries or nuts for added texture and flavor.
