Equipment

  • 1 Crockpot
  • 1 Mixing bowl
  • 1 Wooden spoon

Ingredients

  • 2 cups frozen corn kernels
  • 1 cup diced red bell pepper
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 8 ounces cream cheese softened
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 green onions sliced

Instructions

  • In a mixing bowl, combine corn, red bell pepper, cheddar cheese, sour cream, and cream cheese.
  • Mix in garlic powder, onion powder, salt, and black pepper until well combined.
  • Transfer the mixture into the crockpot.
  • Cover and cook on low for 2 hours or until the cheese is melted and bubbly.
  • Stir in sliced green onions.
  • Let the dip rest for 5 minutes before serving.

Notes

For best results, ensure that the cream cheese is at room temperature before mixing to achieve a smooth consistency. If you prefer a spicier dip, consider adding diced jalapeños or a dash of hot sauce. Always taste and adjust seasoning before serving, and for a crisp texture, you can add canned, drained corn instead of frozen.
