Ingredients
  

  • 2 cup fresh corn kernels
  • 1 cup cherry tomatoes halved
  • 1/2 cup red onion finely chopped
  • 1/2 cup feta cheese crumbled
  • 1/4 cup fresh basil leaves chopped
  • 2 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions
 

  • In a large mixing bowl, combine corn kernels, cherry tomatoes, red onion, feta cheese, and basil leaves.
  • In a medium mixing bowl, whisk together olive oil, lemon juice, salt, and black pepper to make the dressing.
  • Pour the dressing over the corn mixture and toss gently to combine.
  • Serve immediately or cover and refrigerate until ready to serve.

Notes

For extra flavor, consider grilling the corn before cutting the kernels from the cob, which will add a smoky taste to the salad. If fresh corn is not available, canned or frozen corn can be used as a substitute. Adjust the salt and pepper to your taste preference, and feel free to add other herbs like cilantro or parsley for a twist.
