Ingredients
  

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter melted
  • 1 cup milk
  • 2 large eggs
  • 1 can creamed corn 8.5 ounces
  • 1 can whole kernel corn 14.5 ounces, drained

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a large mixing bowl, combine cornmeal, flour, sugar, baking powder, and salt.
  • In a medium mixing bowl, whisk together melted butter, milk, and eggs.
  • Pour the wet ingredients into the dry ingredients and stir until just combined.
  • Fold in the creamed corn and drained whole kernel corn with a spatula.
  • Grease the 9x13 inch baking dish and pour the batter into it.
  • Smooth the top of the batter with the spatula.
  • Place the baking dish in the preheated oven and bake for 45 minutes or until golden brown on top.
  • Remove the casserole from the oven and allow it to rest for 10 minutes before serving.

Notes

For a richer flavor, consider using buttermilk instead of regular milk. You can also add a cup of shredded cheddar cheese or diced jalapeños for added flavor and texture. Make sure not to overmix the batter to ensure a tender and moist casserole.
