Ingredients
  

  • 1 cup all-purpose flour
  • 1 cup cornmeal
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup buttermilk
  • 2 large eggs
  • 2 tablespoons unsalted butter melted
  • 1/2 cup corn kernels fresh or frozen
  • 1/4 cup green onions chopped
  • vegetable oil for frying

Instructions
 

  • In a large mixing bowl, whisk together the flour, cornmeal, sugar, baking powder, baking soda, salt, and black pepper.
  • In another bowl, combine the buttermilk, eggs, and melted butter.
  • Pour the wet ingredients into the dry ingredients and stir until just combined.
  • Fold in the corn kernels and green onions.
  • Heat a frying pan over medium heat and add enough vegetable oil to cover the bottom.
  • Drop spoonfuls of batter into the hot oil and cook until golden brown, about 2-3 minutes per side.
  • Remove the fritters from the pan and drain on a paper towel.
  • Allow the fritters to rest for 5 minutes before serving.

Notes

For the best results, ensure the oil is hot enough before adding the batter to achieve a crispy texture. You can test the oil by dropping a small amount of batter into the pan; if it sizzles, the oil is ready. Adjust the heat as needed to prevent burning. Be mindful not to overcrowd the pan, as this can lower the oil temperature and result in soggy fritters.
