Ingredients
  

  • 4 cup crumbled cornbread
  • 2 cup milk
  • 1 cup heavy cream
  • 3 large eggs
  • 1/2 cup sugar
  • 1/4 cup unsalted butter melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup raisins optional

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • Grease the baking dish with butter or non-stick spray.
  • In a large mixing bowl, whisk together the milk, heavy cream, eggs, sugar, melted butter, vanilla extract, cinnamon, and salt until well combined.
  • Add the crumbled cornbread to the mixture, stirring gently until fully incorporated.
  • If using, fold in the raisins.
  • Pour the mixture into the prepared baking dish, spreading evenly.
  • Bake in the preheated oven for 45 minutes or until the top is golden and the pudding is set.
  • Remove from oven and let it rest for 10 minutes before serving.
  • Cut into portions and serve warm.

Notes

For an added layer of flavor, consider adding a pinch of nutmeg or a handful of chopped nuts to the mixture. If you prefer a sweeter pudding, increase the sugar to 3/4 cup. Cornbread pudding is quite versatile; feel free to experiment with different dried fruits or a splash of bourbon for a richer taste.
