Ingredients
  

  • 4 slices rye bread
  • 2 tablespoons butter softened
  • 1 cup corned beef cooked and sliced
  • 4 slices Swiss cheese
  • 1/4 cup sauerkraut drained
  • 2 tablespoons Thousand Island dressing

Instructions
 

  • Preheat the skillet over medium heat.
  • Spread butter on one side of each slice of rye bread.
  • Place two slices of bread, buttered side down, on the cutting board.
  • Layer each slice with corned beef, Swiss cheese, and sauerkraut.
  • Drizzle Thousand Island dressing over the sauerkraut.
  • Top each with the remaining slices of bread, buttered side up.
  • Place the sandwiches in the preheated skillet.
  • Cook until the bread is golden brown and the cheese has melted, about 3 minutes per side.
  • Use the spatula to carefully flip the sandwiches halfway through cooking.
  • Remove from the skillet, cut in half, and serve warm.

Notes

For the best results, ensure the sauerkraut is well-drained to prevent the sandwich from becoming soggy. Use a sharp knife to slice the corned beef thinly, which allows for even heating and better flavor distribution. If you prefer a crispier texture, you can toast the bread slightly before assembling the sandwich.
