Ingredients
  

  • 1 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1 teaspoon salt
  • 2 large eggs
  • 1 1/4 cups milk
  • 2 tablespoons unsalted butter melted
  • 1/4 cup honey
  • 1 tablespoon fresh herbs minced (such as thyme or rosemary)

Instructions
 

  • Preheat the oven to 450°F (232°C) and place the muffin tin inside to warm.
  • In a mixing bowl, whisk together the flour, cornmeal, and salt.
  • In another bowl, beat the eggs and then whisk in the milk.
  • Combine the wet ingredients with the dry ingredients, mixing just until smooth.
  • Remove the hot muffin tin from the oven and generously brush each cup with melted butter.
  • Pour the batter into each muffin cup, filling them about halfway.
  • Bake for 15 minutes, then reduce the oven temperature to 350°F (177°C) and continue baking for another 15 minutes until golden brown.
  • While the popovers are baking, heat the honey and herbs in a saucepan until warm and fragrant.
  • Remove the popovers from the oven and let them rest for 10 minutes before serving.
  • Brush or drizzle the tops of each popover with the herb honey butter before serving.

Notes

For the best results, ensure all ingredients are at room temperature before starting, as this helps the popovers rise properly. Be careful not to over-mix the batter, as it can lead to tough popovers. Additionally, refrain from opening the oven door during the baking process to prevent them from collapsing. The herb honey butter can be adjusted to taste by varying the types and quantities of herbs used.
