Ingredients
  

  • 2 cup cottage cheese small curd
  • 0.5 cup Greek yogurt plain
  • 0.5 cup shredded cheddar cheese sharp
  • 2 tablespoon fresh chives finely chopped
  • 2 tablespoon fresh parsley finely chopped
  • 1 tablespoon lemon juice fresh
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.25 teaspoon smoked paprika
  • 0.5 teaspoon kosher salt
  • 0.25 teaspoon black pepper freshly ground

Instructions
 

  • Add the cottage cheese and Greek yogurt to the bowl of a food processor or blender.
  • Blend on medium speed until mostly smooth and creamy, scraping down the sides as needed.
  • Transfer the blended mixture to a medium mixing bowl using a spatula.
  • Stir in the shredded cheddar cheese, chives, parsley, lemon juice, garlic powder, onion powder, smoked paprika, salt, and black pepper until well combined.
  • Taste the dip and adjust seasoning with additional salt, pepper, or lemon juice if desired.
  • Cover the bowl tightly with plastic wrap or a lid.
  • Refrigerate the dip for at least 30 minutes to allow the flavors to meld and the texture to thicken slightly.
  • Before serving, stir the dip and transfer it to a serving bowl.
  • Garnish with extra chopped chives or parsley if desired and serve with chips, crackers, or sliced vegetables.

Notes

For best flavor, allow the dip to chill longer (up to 24 hours) if you have time, as the herbs and spices intensify and balance the tanginess of the cottage cheese and yogurt. If you prefer a chunkier texture, pulse the cottage cheese briefly or skip the blender and just mash by hand with a fork. You can customize the dip easily by adding a pinch of cayenne for heat, swapping cheddar for pepper jack, or folding in finely diced bell pepper or green onion. Use full-fat dairy for the creamiest, richest result, and if the dip thickens too much in the fridge, simply stir in a tablespoon or two of milk or yogurt to loosen it before serving.
