Ingredients
  

  • 2 cup cottage cheese
  • 1/2 cup granulated sugar
  • 3 large eggs
  • 1/4 cup all-purpose flour
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup raisins optional

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a large mixing bowl, whisk together the cottage cheese, sugar, and eggs until smooth.
  • Add the flour, vanilla extract, baking powder, and salt to the mixture and mix well.
  • Gradually stir in the milk until fully combined.
  • If using, fold in the raisins.
  • Pour the mixture into a greased baking dish.
  • Place the baking dish in the preheated oven and bake for 40 minutes or until the top is golden brown and set.
  • Remove from the oven and let it rest for 10 minutes before serving.

Notes

For a creamier texture, use full-fat cottage cheese. You can also add a pinch of cinnamon or nutmeg for extra flavor. If you want a sweeter pudding, increase the sugar to 3/4 cup. Serve this pudding warm or cold, and consider topping it with fresh fruits or a dollop of whipped cream for added indulgence.
