Ingredients
  

  • 1 cup canned pumpkin puree
  • 3/4 cup cottage cheese
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar packed
  • 2 large eggs
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves

Instructions
 

  • Preheat the oven to 350°F (175°C) and lightly grease a 9x5 inch loaf pan.
  • In a large mixing bowl, whisk together the pumpkin puree, cottage cheese, granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract until smooth.
  • In a medium mixing bowl, combine the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
  • Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  • Pour the batter into the prepared loaf pan, smoothing the top with a rubber spatula.
  • Bake in the preheated oven for 55 minutes or until a toothpick inserted into the center comes out clean.
  • Remove from the oven and let the bread rest in the pan for 10 minutes.
  • Transfer the bread to a cooling rack to cool completely before slicing and serving.

Notes

For best results, ensure all ingredients are at room temperature before mixing. You can substitute Greek yogurt for cottage cheese if you prefer a smoother texture. Adding chopped nuts or chocolate chips can enhance the flavor and add a delightful crunch.
