Ingredients
  

  • 2 cups grated courgettes
  • 1 cup crumbled feta cheese
  • 1/2 cup all-purpose flour
  • 2 eggs beaten
  • 2 tablespoons chopped fresh dill
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 lemon cut into wedges

Instructions
 

  • Grate the courgettes and place them in a mixing bowl.
  • Add the crumbled feta, flour, beaten eggs, dill, salt, and pepper to the bowl.
  • Mix all ingredients until well combined.
  • Heat olive oil in a frying pan over medium heat.
  • Scoop a heaping tablespoon of the mixture and drop it into the pan, flattening slightly.
  • Cook the fritters for about 3-4 minutes on each side, until golden brown.
  • Transfer the cooked fritters to a plate lined with paper towels to drain excess oil.
  • Let the fritters rest for 5 minutes before serving.
  • Serve the fritters with lemon wedges on the side for squeezing.

Notes

For best results, ensure the grated courgettes are well-drained to prevent the fritters from becoming soggy. You can press them in a clean kitchen towel to remove excess moisture. Adjust seasoning to taste, and feel free to add a pinch of chili flakes for a spicy kick.
