Ingredients
  

  • 1 cup Unsalted butter Softened
  • 1 cup Granulated sugar
  • 1 cup Brown sugar Packed
  • 2 Large eggs
  • 2 teaspoons Vanilla extract
  • 2 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 1/2 teaspoon Baking powder
  • 1/2 teaspoon Salt
  • 2 cups Old-fashioned oats
  • 1 3/4 cups Semisweet chocolate chips
  • 1 cup Chopped pecans Optional

Instructions
 

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy using an electric mixer.
  • Beat in the eggs one at a time, then stir in the vanilla extract.
  • In a medium mixing bowl, whisk together the flour, baking soda, baking powder, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Stir in the oats, chocolate chips, and pecans using a rubber spatula.
  • Drop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake in the preheated oven for 11 minutes, or until the edges are lightly golden.
  • Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a cooling rack.

Notes

For the best texture, ensure the butter is properly softened but not melted. If you prefer chewy cookies, slightly underbake them as they will continue to firm up while cooling. Feel free to customize your Cowboy Cookies by adding different types of nuts, dried fruits, or even coconut flakes.
