Ingredients
  

  • 1 pound ground beef
  • 1 cup onion chopped
  • 1 cup bell pepper chopped
  • 1 can corn 15 ounces, drained
  • 1 can black beans 15 ounces, drained and rinsed
  • 1 can diced tomatoes 15 ounces
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 box cornbread mix 8.5 ounces
  • 1 egg
  • 1/3 cup milk

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • In a large skillet, cook the ground beef over medium heat until browned.
  • Add the onions and bell peppers to the skillet and sauté until soft.
  • Stir in the corn, black beans, diced tomatoes, and taco seasoning.
  • Cook the mixture for another 5 minutes, allowing the flavors to blend.
  • Transfer the beef mixture to a baking dish and spread evenly.
  • Sprinkle the shredded cheddar cheese over the top of the beef mixture.
  • In a mixing bowl, combine the cornbread mix, egg, and milk.
  • Pour the cornbread batter over the beef and cheese in the baking dish.
  • Bake in the preheated oven for 20-25 minutes, or until the cornbread is golden brown.
  • Allow the casserole to rest for 5 minutes before serving.

Notes

To add extra flavor, consider adding a handful of chopped jalapeños or a sprinkle of chili powder to the beef mixture before baking. For a creamier texture, you can also mix in a half cup of sour cream with the beef mixture. Ensure the cornbread mix is evenly spread over the top to achieve an even bake.
