Ingredients
  

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 large onion diced
  • 2 cloves garlic minced
  • 1 can diced tomatoes 15 ounces
  • 1 can kidney beans drained and rinsed
  • 1 can corn kernels drained
  • 2 cups beef broth
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese optional
  • 1/4 cup chopped fresh parsley optional

Instructions
 

  • Heat the olive oil in a skillet over medium heat.
  • Add the ground beef and cook until browned, breaking it apart with a wooden spoon.
  • Transfer the cooked beef to the crockpot.
  • In the same skillet, sauté the onion and garlic until softened.
  • Add the onion and garlic mixture to the crockpot.
  • Stir in the diced tomatoes, kidney beans, corn, and beef broth.
  • Season with chili powder, ground cumin, salt, and black pepper.
  • Mix all the ingredients well in the crockpot.
  • Cover and cook on low for 6 hours.
  • Let the stew rest for 10 minutes before serving.
  • Top each serving with shredded cheddar cheese and chopped parsley if desired.

Notes

For a thicker stew, you can mash some of the beans before adding them to the crockpot. Adjust the seasoning to your taste by adding more chili powder or cumin. For an extra kick, consider adding a chopped jalapeño pepper. Serve with crusty bread or over rice for a hearty meal.
