Ingredients
  

  • 8 slices bread
  • 1 pound crabmeat cooked and picked
  • 4 tablespoons mayonnaise
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons butter
  • 1 cup lettuce shredded
  • 1 tomato sliced

Instructions
 

  • In a mixing bowl, combine crabmeat, mayonnaise, lemon juice, Dijon mustard, salt, and pepper.
  • Mix ingredients until well combined.
  • Preheat a skillet over medium heat.
  • Spread butter on one side of each slice of bread.
  • Place four slices of bread, butter side down, on the skillet.
  • Spoon the crab mixture evenly over the bread slices in the skillet.
  • Top with shredded lettuce and tomato slices.
  • Cover with remaining bread slices, butter side up.
  • Cook until the bread is golden brown and the filling is heated through, about 5 minutes per side.
  • Remove from heat and let the sandwiches rest for 5 minutes before serving.

Notes

For an extra crunch, consider adding a layer of thinly sliced cucumber to the sandwich. If you prefer a spicier kick, add a dash of hot sauce or a pinch of cayenne pepper to the crab mixture. You can also substitute whole-grain or sourdough bread for a different flavor profile.
