Cranberry Feta Pinwheels

  • 1 Baking sheet or serving platter

Ingredients
  

  • 8 ounce cream cheese softened
  • 1 cup feta cheese crumbled
  • 1 cup dried cranberries chopped
  • 1/4 cup green onions chopped
  • 4 large flour tortillas

Instructions
 

  • In a mixing bowl, combine the softened cream cheese and crumbled feta cheese using a spoon until well blended.
  • Add the chopped dried cranberries and green onions to the cheese mixture and stir until evenly distributed.
  • Lay out one flour tortilla on a flat surface and spread a quarter of the cheese mixture evenly over it.
  • Roll the tortilla tightly into a log shape, then wrap it in plastic wrap.
  • Repeat the spreading and rolling process with the remaining tortillas and cheese mixture.
  • Place the wrapped tortilla logs in the refrigerator to chill for at least 1 hour.
  • After chilling, remove the plastic wrap and use a knife to slice each tortilla log into pinwheels, approximately 1/2 inch thick.
  • Arrange the pinwheels on a baking sheet or serving platter, ready to serve.

Notes

These pinwheels can be made a day in advance to save time on the day of serving. Ensure the cream cheese is fully softened before mixing to achieve a smooth filling. For added flavor, consider incorporating a sprinkle of black pepper or fresh herbs into the cheese mixture.
