Ingredients
  

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup milk
  • 1 tablespoon orange zest
  • 1 cup fresh cranberries halved

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • Line the muffin tin with muffin liners.
  • In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  • In a medium mixing bowl, combine the melted butter, eggs, vanilla extract, and milk.
  • Add the wet ingredients to the dry ingredients and stir until just combined.
  • Fold in the orange zest and cranberries gently using a spatula.
  • Divide the batter evenly among the muffin liners.
  • Bake in the preheated oven for 20 minutes or until a toothpick inserted into the center comes out clean.
  • Remove from the oven and let the muffins rest in the pan for 10 minutes.
  • Transfer the muffins to a wire rack to cool completely before serving.

Notes

For best results, use fresh cranberries to ensure a tart contrast to the sweet muffin base. If fresh cranberries are not available, you can use frozen ones, but do not thaw them before adding to the batter. Adjust the sugar amount based on your taste preference and the tartness of the cranberries.
