Ingredients
  

  • 4 russet potatoes large, peeled and cut into strips
  • 2 cup vegetable oil for frying
  • 1 cup cream cheese softened
  • 1/4 cup sour cream
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh chives chopped

Instructions
 

  • Heat the vegetable oil in the frying pan over medium-high heat until hot.
  • Fry the potato strips in batches until golden brown and crispy, about 5 minutes per batch.
  • Remove the fried potatoes with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
  • In a medium saucepan, combine the cream cheese, sour cream, and milk over low heat.
  • Whisk the mixture continuously until smooth and creamy.
  • Stir in the salt, black pepper, and chopped chives.
  • Transfer the fried potatoes to a large mixing bowl and pour the cream cheese mixture over them.
  • Toss gently to coat the potatoes evenly with the sauce.
  • Let the dish rest for 5 minutes to allow the flavors to meld.
  • Serve warm as a delightful side dish.

Notes

For a crispier texture, ensure the oil is adequately hot before adding the potatoes, as this prevents them from absorbing excess oil. Adjust the seasoning to taste, and feel free to add additional herbs or spices for a personal touch.
