Ingredients
  

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 cup onion chopped
  • 2 clove garlic minced
  • 4 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese grated
  • 1 teaspoon Italian seasoning
  • 8 pieces lasagna noodles broken
  • 1 cup spinach chopped
  • Salt and pepper to taste
  • 1/4 cup fresh parsley chopped

Instructions
 

  • Heat olive oil in a large pot over medium heat and add ground beef, cooking until browned.
  • Add chopped onion and minced garlic to the pot, sautéing until the onion is translucent.
  • Pour in chicken broth and bring the mixture to a boil.
  • Stir in broken lasagna noodles and reduce heat to a simmer, cooking until noodles are tender.
  • Whisk in heavy cream and grated Parmesan cheese until the soup is smooth and creamy.
  • Add Italian seasoning, chopped spinach, salt, and pepper, stirring well to combine.
  • Allow the soup to simmer for an additional 10 minutes, stirring occasionally.
  • Remove from heat and let the soup rest for 5 minutes to thicken.
  • Garnish with chopped fresh parsley before serving.

Notes

To enhance the flavor of this dish, consider adding a pinch of nutmeg to the soup for a subtle warmth. If you prefer a thicker consistency, add a tablespoon of cornstarch mixed with water before adding the cream. For a vegetarian version, substitute the ground beef with mushrooms and use vegetable broth instead of chicken broth.
