Ingredients
  

  • 2 tablespoon olive oil
  • 1 pound chicken breast diced
  • 1 medium onion diced
  • 2 clove garlic minced
  • 2 carrots sliced
  • 2 celery stalks sliced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 4 cup chicken broth
  • 1 cup heavy cream
  • 2 cup egg noodles
  • 1 tablespoon fresh parsley chopped

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add diced chicken breast to the pot and cook until browned.
  • Remove chicken from the pot and set aside.
  • In the same pot, add onion, garlic, carrots, and celery; sauté until softened.
  • Stir in salt, pepper, and thyme.
  • Pour in chicken broth and bring to a boil.
  • Add cooked chicken back to the pot.
  • Reduce heat and simmer for 10 minutes.
  • Stir in heavy cream and bring back to a simmer.
  • Add egg noodles and cook until tender.
  • Remove from heat and let rest for 5 minutes.
  • Garnish with fresh parsley before serving.

Notes

To enhance the flavor, consider using homemade chicken broth. Adjust seasoning as needed to suit your taste. For a thicker soup, you can whisk in a tablespoon of flour with the cream before adding it to the pot. If you prefer more vegetables, feel free to add peas or corn during the simmering stage.
