Creamy Ham and Potato Soup

Ingredients
  

  • 2 tablespoons olive oil
  • 1 large onion diced
  • 2 cloves garlic minced
  • 4 cups chicken broth
  • 4 cups potatoes peeled and diced
  • 2 cups cooked ham diced
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1 cup shredded cheddar cheese
  • 2 tablespoons fresh parsley chopped

Instructions
 

  • Heat the olive oil in a large pot over medium heat.
  • Add the diced onion and minced garlic, and sauté until the onion is translucent.
  • Pour in the chicken broth and bring to a boil.
  • Add the diced potatoes and cook until tender, about 15 minutes.
  • Stir in the cooked ham and reduce the heat to a simmer.
  • Pour in the heavy cream and season with salt, black pepper, and thyme.
  • Simmer the soup for an additional 10 minutes until the flavors meld.
  • Remove from heat and stir in the shredded cheddar cheese until melted.
  • Allow the soup to rest for 5 minutes before serving.
  • Garnish with fresh parsley before serving.

Notes

For a thicker soup, you can mash some of the potatoes in the pot before adding the ham and cream. If you prefer a chunkier soup, leave the potatoes whole. Adjust the seasoning to your taste, and feel free to add additional herbs like rosemary for extra flavor.
