Ingredients
  

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 cup onion diced
  • 4 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 cups chicken broth
  • 2 cups tomato sauce
  • 1 tablespoon tomato paste
  • 8 ounces lasagna noodles broken into pieces
  • 1/2 cup heavy cream
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese shredded
  • 1/4 cup Parmesan cheese grated
  • 2 tablespoons fresh parsley chopped

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add the ground beef and cook until browned, breaking it up with a wooden spoon.
  • Stir in the onion and garlic, cooking until the onion is translucent.
  • Add oregano, basil, salt, and pepper, then stir to combine.
  • Pour in chicken broth, tomato sauce, and tomato paste, stirring well.
  • Bring the mixture to a boil, then add the broken lasagna noodles.
  • Reduce heat and simmer until the noodles are tender.
  • Stir in the heavy cream and ricotta cheese until well incorporated.
  • Add mozzarella and Parmesan cheese, stirring until melted.
  • Remove from heat and let the soup rest for 5 minutes.
  • Serve hot, garnished with fresh parsley.

Notes

For best results, ensure the noodles are not overcooked as they will continue to soften slightly in the hot soup. Adjust seasoning to taste with salt and pepper before serving. Consider using a mix of beef and Italian sausage for added flavor.
